ALOO GOBI CROQUETTES

Aloo gobi is a popular combination all over India. Aloo translates to potato and gobi translates to Cauliflower.  But this recipe is with a twist and thats Aloo gobi in form of crispy snack. Croquettes is a comfort snack which we can quickly prepare and and enjoy in the evenings with a hot cup of ginger tea.

INGREDIENTS FOR THE GOBI STUFFING
OIL – 1TBS
CUMIN SEEDS – 1TSP
ONION- 1 SMALL SLICED
GREEN CHILLI – 1 FINE CHOPPED
GINGER GARLIC PASTE- 1/4TH TSP
SALT – 3/4TH TSP
CAULIFLOWER  BOILED AND FINELY CHOPPED – MEDIUM SIZED
CORIANDER POWDER- 1 TSP
TURMERIC POWDER – 1/4TH TSP
CHILLI POWDER – 1 TSP
CAPSICUM – A SMALL PIECE
SPRING ONIONS – 2-3
FOR THE OUTER COVERING
BOILED POTATOES- 4
CHILLI POWDER-1TSP
GARAM MASALA – 1 PINCH
TURMERIC POWDER- 1/4TH TSP
CHAT MASALA -1/2 TSP
SALT TO TASTE
BREADS CRUMBS TO COAT
OIL TO DEEP FRY
                                                               PROCESS
1-First boil the potatoes and cool and boil cauliflower and cool as well.
2-In a hot pan add oil , crackle the cumin seeds, add green chillies, sliced onions,
ginger garlic paste, boiled cauliflower, dry masalas and cook well with a 3-4 spoons of water.
3- Once water is evaporated and cauliflower cooked add finely chopped capsicum and spring onions.
4- Set this mixture to cool
5- Take boiled potatoes in a bowl , add in the dry masalas and mash smooth with no lumps.
6- Oil your palms and take a lemon sized ball in your hand and flatten it place your cooled gobi mixture like a line in middle and start covering with the potato outer covering. Shape it in cylindrical.
7- Coat with bread crumbs and shallow fry until crispy.
